Chitty Spring Roll with Peanut Sauce
Ingredients for Tofu Stuffing:
1 ½ cups Tofu, crumbled by hand
1 tablespoon Cilantro, finely chopped
5 cloves Garlic, finely chopped
1 teaspoon Black pepper
2 tablespoons Seasoning soy sauce
1 teaspoon Mushroom seasoning (optional)
2 tablespoons Sweet soy sauce
1 teaspoon Palm sugar
1 tablespoon Coconut oil
A pinch of Salt
Ingredients for Peanut Sauce:
1/2 cup Baked peanuts
2 cloves Garlic
1 Thai chili
2 tablespoons Lime juice
3 tablespoons Palm sugar or honey
1 teaspoon Salt
1 tablespoon Light soy sauce
½ cup Warm water
Ingredients for the Wrap:
10 Rice paper wraps
1 cup Rice noodles
1 cup Bean sprouts
10 leaves Romaine lettuce
1 large Cucumber, peeled and cut lengthwise into 10 pieces
1 large Carrot, peeled and cut lengthwise into 10 pieces or shredded
Instructions for Cooking the Tofu:
1. Blend or pound garlic, pepper, and cilantro until fine.
2. Heat 1 tablespoon of coconut oil in a pan over medium-high heat.
3. Add the garlic, cilantro, and ground pepper mixture, stir-fry until it turns yellow.
4. Add crumbled tofu, seasoning soy sauce, mushroom seasoning (if using), and sweet soy sauce. Stir-fry for 3-5 mins until the tofu is cooked. Remove from heat and set aside.
Cooking Bean Sprouts:
1. Heat 2 tablespoons of cooking oil in a pan over medium-high heat.
2. Add garlic, cilantro, and ground pepper, stir-fry for 3-5 mins.
3. Add seasoning soy sauce and mushroom seasoning (if using). Stir-fry for 3-5 mins until cooked. Remove from heat and set aside.
Cooking the Noodles:
1. Boil water, add noodles, and cook for 3-5 minutes.
2. Drain the noodles and place them in a bowl. Add sweet soy sauce and seasoning soy sauce, then mix well. Set aside.
Peanut Sauce:
1. In a mortar and pestle or blender, combine chilies, garlic, and peanuts; pound or blend until coarsely fine.
2. Add coconut sugar or honey, salt, lime juice, and water, continuing to pound or blend until well combined.
3. Taste and adjust the seasoning, aiming for a balance of sweet and sour. Garnish with chopped cilantro.
Assembling the Spring Rolls:
1. Soak rice paper wraps in water for 20 seconds, then lay flat on a cutting board.
2. Place a portion of carrot, cucumber, romaine lettuce, cooked bean sprouts, cooked tofu, and cooked rice noodles on each wrap. Fold and roll tightly.
3. Place the assembled rolls on a plate and cut into bite-sized pieces if desired. Garnish with fried garlic and cilantro, and serve with the prepared peanut sauce.
