Khao Soi

Ingredients:

  • 8-10 big dried mild chilies (less chillies = less spice)

  • 5 garlic cloves

  • 2/3 cup of fermented bean curd sheets

  • 1/3 cup of fresh turmeric

  • 1/3 cup of turmeric powder

  • 2 cups of shallots

  • 2 Chinese cardamom seeds

  • 1 1/2 cups of coriander seeds

  • 1/3 cup of fresh ginger

    **Note**

    In case you cannot find all the ingredients to make khao soi paste, you can use red curry paste and add some ground turmeric, ginger, ground coriander seeds and blend it all together well and use it as a khao soi paste.


Ingredients of Khao Soi  Soup:Here's a simpler version:

  • 3 cups chopped tofu

  • 2 cups mushrooms

  • 4 cups coconut milk

  • 6 cups water

  • 1-2 packages Chinese spice blends

  • 2 tbsp light soy sauce

  • 2 tbsp seasoning soy sauce

  • 4 tbsp palm sugar

  • 2 tsp mushroom seasoning

  • 1 tsp salt

Ingredients of noodles and vegetables that are served with khao soi:

  • 500g yellow rice noodles

  • 200g fried yellow rice noodles

  • 1 cup shallots or onions

  • 1 cup sour pickled green mustard (lettuce)

  • ½ cup chopped green onion

  • ½ cup chopped cilantro

  • ½ cup fried garlic

  • 5-7 slices lime

Instructions for making khao soi curry paste:

1. Use 8-10 large dried chilies. Crush the seeds and add 5-6 garlic cloves.
2. Include fermented beans, fresh turmeric, turmeric powder, shallots, cardamom, and coriander seeds, then crush them all.
3. Once it becomes a paste, add a pinch of salt and mix well.d pound them all well.

** Note**

You can blend everything and it will turn to khao soi paste.


2. Making Khao Soi Soup:

1. Add 2-4 tablespoons of khao soi paste with 1 cup of coconut milk and Chinese spice then  stir fry for  3-5 minutes 

2. After That  Add 1 large cup of water and wait for the water to boil and then add tofu, mushroom stir and let the mushrooms cook for 7-10 minutes.

3. Add 5 more cups of water, 3 more cups of coconut milk, salt, palm sugar, light soy sauce, seasoning soy sauce, mushroom seasoning then stir well and let it  boil for 30 minutes.

4. The taste of Khao Soi soup will be slightly sweet and salty. Boil it for 1 hour and it's done.


3. Making Noodle.

1.  Fry the khao soi noodles:

Get the oil and deep fry the raw khao soi noodles for 5 -7 minutes and take it out.

2. Boil Khao Soi noodles:

Boil 6 cups of water  and add a pinch of salt. Until the water boils, add khao soi noodles to boil for 5-10 minutes then rinse the water out.

Serving Khao soi:

Put khao soi in the bowl and then add  khao soi soup on top  then  add the chopped green onion, cilantro, sour picked lettuce, fried garlic, fried chili and fried khao soi noodle. If you like you can have a slice of lime on top.
