Mango and Sticky Rice

Ingredients:

  • 3 cups sticky rice

  • 3 cups coconut milk

  • ½ to 1 cup palm sugar (adjust to taste)

  • ¼ teaspoon salt

  • 6 cups water (for soaking the sticky rice)

Alternative Fruits (Available in America):

  • Ripe strawberries, sliced

  • Fresh blueberries

  • Sliced bananas

  • Peaches, sliced

  • Pineapple chunks

Instructions:

1. Soak the sticky rice in 6 cups of water for 2-3 hours.

2. After soaking, steam the sticky rice for 45 minutes to 1 hour. Alternatively, you can cook it in a

rice cooker by combining 3 cups of sticky rice with 2 ¾ cups of water, cooking for 20-30 minutes.

3. While the rice is cooking, prepare the coconut sugar sauce. Combine coconut milk, palm sugar,

and salt in a pot. Stir well over medium heat for 5-10 minutes.

4. Once the rice is cooked and still hot, mix it into the coconut sugar sauce. Let it sit for 10-15

minutes.

5. Serve the sticky rice warm, accompanied by your choice of sliced strawberries, blueberries,

bananas, peaches, or pineapple chunks.

**Taste tip**

Steaming the sticky rice is recommended for a better texture and flavor, but a rice cooker can be used

for convenience.
