Pad Prik Gaeng

Ingredients:

  • 1 tbsp coconut oil

  • 5 cloves garlic, minced

  • 1 tbsp red curry paste

  • 1 tbsp finely chopped galangal

  • 7 kaffir lime leaves (optional)

  • 2 cups long beans or green peas

  • 1 cup firm tofu, medium dice-sized

  • 2 tbsp soy sauce

  • 1 tsp mushroom seasoning (optional)

  • 1 tbsp palm sugar (or substitute honey)

  • A pinch of salt

  • 1/4 cup coconut milk

  • 1/4 cup water 

Instructions:

 1. Heat the coconut oil in a pan over medium-high heat.

 2. Add the minced garlic and stir-fry until it turns golden.

 3. Mix in the red curry paste and chopped galangal, then stir-fry for 2-3 minutes.

 4. Incorporate the diced tofu and cook for 3 minutes. Then, add the long beans (or green peas), seasoning soy sauce, mushroom seasoning (if using), palm sugar, and a pinch of salt. Continue to stir-fry for another 3-5 minutes.

 5. Once everything is cooked through, add the coconut milk and kaffir lime leaves, if using. Stir everything together until well combined and heated through.

 6. Serve hot and enjoy your delicious Pad Prik Keang!

***NOTE***

Remember, you can adjust the amount of red curry paste based on your preference for spice levels and substitute honey for palm sugar if needed. The optional kaffir lime leaves will add a distinctive citrus flavor that is characteristic of Thai cuisine.
