Salad Ingredients:
100g glass noodles
1/4 cup sliced onion
1/4 cup sliced tomatoes
1/4 cup chopped cilantro
1/4 cup chopped celery
1/2 cup boiled, crumbled tofu
1/3 cup boiled mushrooms
1/4 cup roasted peanuts
Salad Sauce Ingredients:
2 garlic cloves
1-3 Thai chilies (use more for spicier taste)
2 tbsp sugar
2 tbsp light soy sauce
1 tsp salt
2-3 tbsp lime juice
Instructions:
1. Begin by soaking the glass noodles in cold water for about 10 minutes, or as instructed on the package.
2. Boil water for 5-10 minutes, then add the glass noodles. Wait for the water to return to a boil. If needed, add room temperature water to make the noodles soft and sticky. Stir briefly, then drain and set aside.
3. In separate pots, boil the tofu and mushrooms for 5-7 minutes. Once cooked, remove and allow them to drain.
4. For the salad sauce, blend the garlic, Thai chilies, sugar, light soy sauce, salt, and lime juice in a blender until smooth.
5. In a large mixing bowl, combine the cooked glass noodles, tofu, and mushrooms with the sliced onion, tomatoes, chopped cilantro, and celery.
6. Pour the prepared salad sauce over the noodle mixture and toss well to combine everything.
7. Garnish with roasted peanuts, and the salad is ready to serve.
