Som Tom
Ingredients:
1 clove garlic
1-3 Thai chilies (adjust quantity based on desired spiciness)
½ cup roasted peanuts
2 tablespoons light soy sauce
½ teaspoon salt
2 tablespoons palm sugar
2 tablespoons lime juice
1 tablespoon tamarind sauce
2-5 small tomatoes
1 large handful of shredded green papaya
¼ cup shredded carrots
¼ cup long beans (optional)
Instructions:
Peel the green papaya using a carrot peeler or knife. Shred the papaya using a cheese grater.
Place1 clove of peeled garlic and 1-3 chilies in a mortar (krok). If you don't have a mortar, use any suitable tool to crush the chilies and garlic.
Pound the garlic and chilies for a few seconds until the garlic is crushed and the chilies are reduced to small bits.
Add palm sugar, soy sauce, salt, lime juice, tamarind sauce, and long beans to the mortar. Pound the mixture for about 3 minutes, ensuring that the palm sugar is fully dissolved into the liquid.
Add the shredded green papaya and carrots to the mortar. Mix well until all ingredients are thoroughly combined and the dressing is evenly distributed.
