Chitty Yellow Curry (Gaeng Gari)
Ingredients:
2 cups of potatoes, medium-diced
1/2 cup of onions, diced
1/2 cup of carrots, diced
1 cup of tofu, medium-diced
1 tablespoon of yellow curry paste
2 teaspoons of yellow curry powder
1 tablespoon of coconut oil
2 cups of coconut milk (use 1 to 1 1/2 cups for a less creamy texture)
2 cups of water
2 tablespoons of light soy sauce
2 tablespoons of seasoning soy sauce
1 teaspoon of mushroom seasoning (optional)
3 tablespoons of palm sugar
1/4 teaspoon of salt
Instructions:
1. Heat 1 tablespoon of coconut oil in a pot over medium-high heat.
2. Add 1 tablespoon of yellow curry paste and 1/2 cup of coconut milk to the pot. Stir fry for 3-5 minutes until the mixture is well combined and fragrant.
3. Add the diced potatoes, onions, carrots, and tofu to the pot. Stir well to combine with the curry paste mixture.
4. Pour in the remaining coconut milk, water, light soy sauce, seasoning soy sauce, salt, and palm sugar. Stir well to mix all the ingredients.
5. Allow the curry to boil for 10-20 minutes, or until the vegetables are tender and well-cooked.
6. Adjust the curry to your taste. You can add the remaining coconut milk and yellow curry powder, stirring well to combine. Cook for an additional 1-2 minutes.
7. Taste the curry and adjust the seasoning if necessary. Serve hot and enjoy your delicious homemade Yellow Curry!
